I've seen a couple of these, but not all. I agree w/ you on Before Sunrise and Before Sunset-the only word I can think of to describe them is "beautiful" but it isn't a good discription b/c is vague and cliche and the films are more than that.
I disagree on Fight Club, but maybe that's just because I didn't like that movie.
I also liked Lost in Translation but I'd describe my reasons for liking it differently. "unique", "subtle" and "bittersweet" are all words that come to mind when I think of it.
Overall though I found your descriptions very interesting and insightful. I think I'll rent a few of these.

omg- MATCH POINT!!! i just came back from the movies- i loved it! in the middle of the movie i wanted to run out cuz i couldnt take it anymore but the end.... its really good!
