I am a big fan of hers but I am so confused as to whether she is officially going by the more westernized spelling of "Johnson" or if she is going to be "Johnsen". Anyone know??

No idea. Johnson and Johnsen is basically the same name, Johnson is the Swedish version and Johnsen is the Norwegian one. Her agencies calls her Johnsen, though..

If I were her I'd go by Johnsen because in America Johnson spelled with an "o" is really common. Maybe it is the other way around though where she is from?

And yes, Johnsen with an E is more common in Norway, where she's from. Only people hailing from Sweden writes it with an O :-)
