this is my favourite because it is quick and easy to cook. try it!

shoyu spaghetti with mackerel and seaweed
ingredients
wholemeal spaghetti
cabbage, shredded
carrot, sliced
canned mackerel in brine, flaked
onion, diced
soy sauce
pepper
s&b chilli mix
olive oil
roast seaweed, shredded

steps
1. cook spaghetti in boiling water, a tsp of olive oil and a pinch of salt until al dente.
2. heat 1 1/2 tsp of oil in pan and add onion.
3. fry till slightly brown and add vegetables. stir fry and add mackerel after about 2 minutes.
4. season with soy sauce, salt and pepper.
5. add noodles and mix well quickly. remove from heat.
6. sprinkle chilli powder mix if you like it spicy and top with seaweed.
 
Hey cool topic! Just hope there isn't already an existing one! Will try this cos I love pasta but I'll change the mackerel in brine to tuna cos that's the only fish i eat!

Will post my fave healthy recipes later when I'm not so lazy to type :blush:
 
oh dear, i should have done a search first...

tuna or salmon will be good as well, even prawns/shrimps!
 
canned tuna
with low fat mayo
chopped celery
chopped onions (if you like em)
lettuce/any other veggies you like
pepper to taste
and a whole wheat pita.

this is so filling, and tuna fish is really good for you.
 
Tuna is also full of mercury though - don't eat it more than twice a week.
 
summer pasta:

combine 3-4 large regular or 5-6 roma diced tomatoes in a bowl with some olive oil, minced or pressed garlic, shredded basil and one wedge of brie (no rind, torn into pieces), salt and pepper to taste. cover and let sit at least an hour.

cook up 1 lb pasta (I prefer linguine or spaghetti), toss with with tomato mixture.

yum.

I hate to get hysterical about this stuff but I've been reading about the disasterous effect too much tuna has on kids -- like it caused a four year old to developmentally regress (she stopped talking, hair was falling out). frightening.
 
i have a really yummy, hearty, low-fat vegan chili:

1/2 cup veggie broth or water
2 medium carrots, diced
i medium onion, diced
2 can beans (black or kidney or both)
2 cans diced tomatoes
6 oz can tomato paste
3/4 cup brown rice
12 oz canned corn
1 can garbanzo beans (chick peas)
2 teaspoons chili powder
1-2 teaspoons curry powder

directions: in a big pot, simmer onions and carrots until the onions are translucent. then add all other ingridients plus some extra water if it's too thick and mix. cook on low heat for about an hour (stirring every few minutes) or until the rice is done. serve with wheat (or rye) bread.

Make your own muesli!
I love muesli in the morning and now I make my own. I even toast some bacthes by laying out the muesli (excluding the dried fruit becasue otherwise they kinda blow up) onto a tray and drizzling some honey over then jsut toast it for a bit, add the dried fruit and voila!
So this is what I put in my very own muesli recipe:
Rolled oats (a lot)
Dried fruit - saltanas and dates
A few nuts - almonds
Small handful of sunflower seeds
Some Bran and Wheatgerm - about a table spoon of each
and some cinnamon
> Very healthy and very tasty
 
This is really simple, and it's probably not even considered a recipe... but you get some protein and veggies in :)

Mix:

1/2 cup black beans
2 oz. cheese
1 medium-sized tomato
3 small mushrooms
1/8 onion

Heat for 2.5 minutes, and voila... very filling, and extremely healthy. :)
 
Erin's Salad

Ok this is my favorite salad, i call it Erin's Salad B) (like what? Caesar can have one and i can't? Get real...):lol:


Ok:
Tomato
Cucumber
Corn
Onion
Turkey
Feta Cheese

I don't put a dressing cause i prefer it that way, but if you want to, olive oil is the best.

I know it's not a recipe, but i don't know how to cook!!!:innocent:
 
Cider brined pork chops (lean meat, cooked with very little fat, lot of flavor, and soooo delicious). It's also really easy, if you have time in the morning or the night before to set up the brine.

4 1/4 cups apple cider or juice
3 tablespoons coarse salt (kosher)
6 allspice berries
1 bay leaf
4 10-ounce boneless pork chops


Bring 4 cups cider, salt, allspice, and bay leaf to boil in large saucepan, stirring to dissolve salt. Cool completely. Place pork in glass baking dish or bowl. Pour brine over. Cover; refrigerate overnight.

When you're ready to cook, quickly rinse the chops and dry them with a paper towel, brush or spray with olive or grapeseed oil. Grill or broil to desired doneness, about 5 minutes per side for medium.

When I'm feeling really healthy I eat them with unsweetened applesause and lightly sauteed leeks or smashed red potatoes. But they're excellent with creamed leeks and Calvados apples :chef:
 
How many of you cook dinner every night? I wish I had the homemaker gene, I just cant seem to get into it :cry: But I am totally motivated to clean the kitchen and cook something from scratch thanks to all these yummy sounding dishes. Thanks!
 
These sound wonderful! I love avocado with a little kosher salt and ground peppercorns. It's very filling and refreshing. I also really enjoy slicing cucumber and mint leaves and putting them in a pitcher of water. It's beyond sublime in the summer and makes me feel like I'm at the spa. Plus it's the added benefit of making me drink more water!

CHINESE SWEETCORN SOUP
1/2 sweetcorn, chop into 2-3 cm chunks
1/2 carrot, chop into chunks
1 small tomato, cut into wedges
1 onion, cut into wedges
soya sauce
white pepper

1 Place ingredients into pot and pour in 1 1/2 bowls of water.
2 Bring to boil and simmer until vegetables are cooked and softened.
3 Season with soya sauce and pepper.
