The Vegetarian & Vegan Thread

im a veggie myself but i do eat fish...
i cant cook at all so thats a big problem cos my family (especially my grandma - i live with her) doesnt know how to cook vegetarian meals (or with fish) and so i end up eating more or less the same...does someone know a website with recipes? simple recipes with simple ingredients prefered....
Cheese sauce
Ingredients (I’m not sure how many portions this will make so you might want to use the full recipe the whole time and see how much it makes and then if it makes to much half/quarter the recipe)
190ml milk
15g margarine
15g plain flour
50g hard cheese (grated) – Add more cheese if you like a really cheesy sauce

Method
  • In a pan on a gentle put the flour, margarine and milk in a pan and whisk continually until it comes to the boil
  • Add the cheeses and whisk them again, allowing the cheese to melt
You can use this as a sauce for pasta/macaroni cheese or to make broccoli or cauliflower cheese

Basic Pizza
Ingredients (makes 1 large portion or 2 smaller ones)
(Base)
2.5 oz wholemeal (or white if you prefer) flour
55ml warm water
¼ tsp salt
¼ pack yeast (2 grams)
½ tsp sugar
1 tsp olive oil
(Toping)
1 oz cheese
2 table spoons tomato puree
Sprinkle of herbs such as oregano (Optional)

Method
Oven preheated to 200 C/400 F/Gas mark 6
1. Put the flour, salt, yeast, sugar and oil in a bowl
2. Add warm (but not boiling) water bit by bit mixing it in until dough makes a ball but is not too sticky and Knead the dough
4. Roll out dough on a floured surfaced into a circle shape
5. Leave base to rise in a warm place on a lightly floured tray (If you have a grill above your oven the heat rises from the over so is a good place to rise it) for about 20 minutes
6. Spread the tomato puree on the base and sprinkle the herbs on top and the put the cheese on top
7. Put in oven and remove when cheese is well melted and the base is cooked

(If you don’t want to make the base you can just buy a pre-made one from a supermarket and it works just as well. You can also vary the topping by adding different veggies)


Also some other really simple meals are things like omelette (2 eggs makes a good size omelette for 1 person) served with vegetables Also brown rice with pulses (ones that are canned are best as they need no preparation), such as lentils, stirred in and with extra veggies is really simple but tasty

Some more recipes:
Chinese stir fry vegetables (2 servings)
Ingredients
1 tablespoon oil
½ small onion, chopped
1 stick celery, chopped
1 carrots, thinly sliced
4 ounces cabbage, shredded
Pinch of salt

Method
1. Heat the oil in a large frying pan. with a lid. Fry onion, carrot and celery covered on a high heat, for 1 minute
2. Add cabbage and salt. Cover and fry for 4 minutes, shaking the pan occasionally
3. Serve immediately


Mushroom soup (2 servings)
Ingredients
8 ounces mushrooms, washed and thinly sliced
1 ounce butter or margarine
1 tablespoon flour
pinch of salt and pepper
1 pint of milk or water (Milk makes a richer soup, which I prefer to the one made with water)

Method
1. Melt the butter in a saucepan and fry the mushrooms for 5 minutes
2. Stir in the flour and add the seasoning
3. Slowly add the liquid, stirring all the time
4. Bring to the boil and summer for 10 minutes


Green Bean and tofu stir fry (Serves 2)
Ingredients
8 ounces tofu
4 ounces green beans (Mange-tout also tastes nice in it)
1 spring onion
1 tablespoon vegetable stock
½ tablespoon oil
1 teaspoon soy sauce (optional)

Method
1. Squeeze out excess moisture from tofu with a clean tea towel. Cut tofu into 1 cm cubes, unless the tofu is pre-cubed
2. Wash the French beans and trim any stalks. Trim away the roots and coarse leaves on the spring onion. Slice onion into strips
3. Heat oil in a large frying pan. Add the French beans and tofu and heat for 3 minutes stirring well. Stir in the spring onions and serve immediately


Baked potatoes are also easy, just heat the oven at 190C/375F/gas mark 5, wash the potatoes and prick them with a fork (otherwise they explode), then rub with oil and a little salt and place in oven for between an hour and an hour and 20 minutes, depending on the size of the potatoes.

Yes- one of my favorite Google searches is for celebrity vegetarians. I love reading interviews with Alicia Silverstone, Kristen Bell, Carrie Underwood, etc all about it. Sometimes they can be very inspiring.

And I am just about to make that green bean and tofu stir fry! ;):woot:

Like J.Lo, Britney and Diddy before her, rock chick Chrissie Hynde is the latest music artist getting into the restaurant biz. Table three needs earplugs!

The Pretenders frontwoman is opening a vegetarian Mediterranean restaurant, called VegiTerranean, in the culinary capital of Akron, Ohio. Middle of the road!

Hynde grew up in Akron and will perform at the eatery's September 15 grand opening. Rock and rolls!
 
I gave a question, hopefully some of you can answer this. I have been eating organic black beans, and chilli in a can. Is there a way to flush some of the sodium from your body out? .:flower:
 
^ Yeah and also lots of brands make low sodium options for their canned food. They always print "Lower in Sodium" or "x% less salt" on the front of the can, so be sure to read the labels. :)

It makes me never want to look at meat again, let alone eat it. :sick:
 
^^ive never seen it but ive read an article in Elle some time ago...the article alone grossed me out
