CORA LEE'S CROCKPOT BREAKFAST

1/2 c short grain brown rice
1/2 c millet, washed
1/2 c barley, washed
8 cups water
1/2 c or more, date pieces*
1 ts vanilla
1 ts lemon juice

At night, rinse the insde of your crockpot with water. Add all ingredients
and combine. Cook on low all night. In the morning, stir and serve hot
with milk substitute of your choice. This makes quite a lot.

* I buy what is labeled as 'date pieces' at a little over $2. a pound at
our local natural foods store run by SDA people. I haven't seen them
elsewhere. It is ground dates that are kept in 'pellet' form by dusting
with oat flour. I use them in my cooked cereals and sometimes when I make
fat-free cookies. a real handy thing compared to using whole or pitted
dates, and much less expensive!

Alicia Silverstone was on The View today talking about her Silk Soy Milk promotion and green caps. I think you can go to the Silk Soy Milk website for info. For anyone who wants to make the switch to soy milk, this might be a good inspiration. :)

I ordered a bunch of info from PETA on going vegan, and it came yesterday. It was just some free pamphlets. Anyway, they had really graphic pictures in there from slaughterhouses. I swear that after seeing those, I can barely eat ANYTHING today. It was a bit disturbing, and I would have preferred not to look.

One of the many reasons why I refrain from visiting PETA's website. :yuk:
 
I usually have a muffin for breakfast. I've got a delicious—yet healthy and vegetarian—recipe for muffins that I found off of Hungry-Girl.com. There are only two ingredients, and they're both easy to find. Note: they're not vegan, however, as one of the ingredients has milk in it.

What a fabulous recipe! Would other canned fruit purees work? What about applesauce?
Can I add chunks of fruits and nuts? (blueberries, walnuts, etc....)
I'm going grocery shopping tomorrow; I'm definately adding this one to the list!
 
While PETA's website really made me want to become a vegetarian, I don't look at their stuff anymore. It just disgusts me and I'd rather not live with such a negative outlook on mankind. I prefer to see the good in the world, and I don't want to dwell on stuff like that all the time.
 
Oh, by the way, I just discovered a wonderful vegan "butter". It's called Earth Balance. It's tasty, and completely vegan!
 
^ Does it have trans fats? I have been wondering how you guys avoid both butter & trans fats ... :huh:
 
Well, no trans-fatty-acids. To tell you the truth, I don't even know if that's the same as trans-fat.

while i applaud you for looking at the positive things in life, you don't make the negatives go away by ignoring them...i myself am not a peta supporter, but mostly it's because i don't care for their tactics, and think they misuse their funds.

What I was trying to say was that I don't like to dwell on that kind of stuff. I'm not turning my eyes away and ignoring the problem, but I'm also not surrounding myself with all of those negative images. I have made the decision to become a vegetarian and to try to eat as cruelty-free as possible. I also tell things to the people I care about (family, friends, my boyfriend) about how being vegetarian is a great lifestyle. To me, I think that's a really great step, and I don't look at the PETA stuff anymore because I don't feel like I need to see all those negative things which aren't really helping me convince myself that being veggie is the way to go, because I already feel that way, and I'm already changing the minds of people around me into adaption to a more vegetarian lifestyle.
 
Organic and Kiwi, you both make great points, and I definitely agree with both of you. :) I think you can pay attention to the issues and not get too extreme or radical. You can even still influence others! In fact, you can probably be more effective if you don't push the issues down other's throats.

You know, I haven't tried making the recipe with any other purees. I imagine applesauce wouldn't work alone (you could definitely add it to the pumpkin and cake mix, though), since it has such a watery texture.

I think customizing the muffins with fruits and nuts would be a great idea. I'm planning on adding banana(s) to my next batch. Glad you're trying out the recipe! :flower:

when I wasn't vegetarian I didn't even look at videos of the process. Didn't want to know. It's the same for a large majority of people who aren't vegetarian. If they ignore videos or just dismiss them as being scare tactics/propaganda/fake snuff, it's easier to just keep eating whatever they want.

I see those videos as incentive to really try and make a better world for everybody and everything. I think a lot of people don't realise that the vegetarian movement actually benefits people more than animals in many aspects. The most common remark made towards me is "why don't you care about people instead of animals?"

We need to mature as a society and we can easily be more ethical and compassionate. We just need to become more aware of the issues and take that step forward.
 
I'm a vegetarian and think so much of what goes on with making the meat is awful, but even I think a lot of those videos are dramatizing whats going on and in the worst case senarios. Although, I agree a lot of people choose to just ignore it becuase thats easier.

I was flipping through a vegetarian cookbook today that mentioned Bertolli for vegan pasta. I didn't know that they made other products as well. (if that's the same company.)

I think it tastes good. My only problem with it is that it's a little harder to spread than real butter. I try spreading it on my organic whole wheat waffles and it's really hard. :lol:
