Well, everyone calls Jessica Stam by her last name too so there's precedent . Personally, I'd find it weird calling her "Juan" since I'm more familiar with that as a boy's name in Spanish .

If it was written in the Western style, yes. In East Asian cultures (e.g. China, Japan, Korea), they always start with the surname first. And Juan wouldn't be pronounced like the Spanish name "wan" but more like "dj-uen". It's kind of a hard sound to explain because there's no English equivalent.
