Astronauts growing up to 2" is due to the decrease in gravity in space. To put it in simple terms, when you're on Earth and the amount of gravity is higher, more pressure is put on your spine; in contrast, when you go to space, less pressure from gravity is applied and your spine essentially stretches out.
That makes sense.
