I have four favorites. Two are classics, one is a new acquisition and the last is self serving (I wrote it). My choices are more of a technical bent, the kind that I know working designers are more likely to use.
My most favoritist one is Vionnet by Betty Kirke. A classic. A review with analysis is here (scroll down).
My second favorite classic is Haute Couture, The Tradesman's Entrance. It's about the artisans behind the scenes who make haute couture possible (pleaters, embroiderers etc). A review of it, mostly about pleating with some photos is here (also includes pleating resources if you're needing to produce pleated skirts). Rare title, pricey.
My newest book-toy is Pattern Magic. No direct link, not on Amazon but several sources are listed here. It is avant garde pattern cutting, most useful for pattern makers but should be inspirational for designers in style development. Available and inexpensive, most ship from Japan with free postage (you can $5 extra for expedited delivery). Here's a photo of the cover:
