Doesn't sound strange to me! There are some wonderful recipes on the internet for butternut squash chili. Can be made vegan or vegetarian. They're really delicious. Plus the beans in the chili give you a nice serving of protein!

good idea. but will you be having pumpkin pie? Do you really want two pumpkin dishes? I had pumpkin soup two weeks ago though and it was delish.

What about a bit of tofurkey? I'm pretty sure you can order it off the website.

Tofurky is so good. Last year after thanksgiving, I bought three of them on sale and made them periodically. Now I'm getting hungry just thinking about it!

good point Meg.. Thanks for all the ideas you guys! I've never heard of tofurkey:o I will have to check it out:flower:

I think it tastes delicious (but I've been vegetarian for ten years now, so I don't remember what the real stuff tastes like). You can get them in the freezer section at Whole Foods or any health food store. They sell the roast(the actual Tofurky) by itself or in a big box full of other stuff. I usually just buy the roast and the "giblet" gravy separately because I don't really like the other things that come with.

^thanks for that info! I checked out their website and it said that they're available at Whole Foods! So I might just fix that for thanksgiving! A plus is all the leftovers go to me:p

My mom is going to buy me a tofurkey, what is the texture and is it tasty?

If you cook it properly (i.e. if it's moist enough and cooks long enough/slow enough) it is delicious. When you see it, you'll think its funny. It's just this round, frozen ball. Inside, it's fake turkey with wild rice stuffing in the center. For those of you who have recently stopped eating meat, this will not taste exactly like thanksgiving turkey. That being said, it's really good and I personally am an addict.

Also, if you're looking for a healthier alternative to the usual preparation of sweet potato/yam, try oven roasting. I use some of that cooking spray to coat the bottom of a cookie sheet, slice the yam into even slices, lay them on the cookie sheet, spray the tops of the slices with cooking spray, sprinkle with seasoning (garlic salt for a savory taste or cinnamon for a sweet taste), then cook at 350 for 20-30 minutes until cooked (depending on the thickness of the slices). They're delicious. Always a favorite when I cook for my friends.

I haven't had turkey in 7 years, so I think it might be yummy!
Any vegetarian gravy?

They sell "giblet" gravy to go with it. It's really tasty, especially when it's hot.

Yeah that's how I do them too in the UK we call them 'sweet potato' as opposed to Yam. I love it, the taste is great, and the texture when they've been cooked is lovely.

I love the texture too. It's almost creamy. It's delicious!

you can also make sweet potato fries, the same way, by baking and cutting into wedges, the way you would regular potato. Then toss in olive oil, you can add rosemary and sea salt.
It gets just as crunchy as regular fries and really yummy.

I'm testing out a butternut squash chili recipe tonight. If it's good, I'll share the recipe with everyone!

mmmm I love sweet potato fries! delicious! I have a couple of sweet potatoes in my cupboard that i need to use up asap.

Let us know how that goes marcy. We had a butternut squash risotto last night in my house! It was delicious!
