The Vegetarian & Vegan Thread

A lot of people believe that fish are creatures who are capable of feeling pain, learning, family bonds etc. Not only that but a big by product of the fishing industry includes dead dolphins, whales and a polluted water system. I think if you make the choice not to eat animals based on the fact that suffering should be abolished then it just has to go for the fishing industry too. It isn't like these fish are caught in a small net and immediately culled, thousands of them are dragged up in harsh nets, left to die in the sun for days along with other marine animals. I think it's about taking responsibility for what you eat and accepting that mass industries just cannot provide any sort of animal welfare.

I have not been here in ages.
I have a recipe...
Mushroom Spring Rolls
Give a rough Chop up to
Portobello's
Baby Bello's
White Mushrooms
Shitakes
White Spanish Onions
Garlic

Saute in Olive Oil- set aside

Then take egg roll wrappers and follow instructions for rolling.
Put in olive oil that was slowly heated and fry up.
mmmm

You can also, if you eat cream cheese, mix the above with cream cheese to form a thick paste, same consistency as blended cream cheese.
Take wonton wrappers, spoon in filling and pull the corners up and pinch to make a little bag shape or any shape for that matter- triangles work good and crimp the edge with a fork...then fry in olive oil.

YOU HAVE TO TRY IT!!
 
PS, if anyone is in NYC, go to TEANY, Moby's old place ( the girl owns it alone now) It's vegan friendly.

Also, a place that's been around for a while BabyCakes....you don't miss the butter, milk, eggs, UNREAL.

Thank you for explaining that to me. I did try to give up fish, but I can't and it is very difficult for me because it hurts my stomach.:( The only fish I eat are Salmon and Tuna and I always make sure they have the dolphin friendly label on it. ;)

Also I drink milk or have milk as an ingredient, but I don't eat eggs.:yuk:

Yep still a pescetarian from what I can see, well done for not eating eggs though, you're a stronger person than me (well I use about 6 a month as ingredients and I only buy organic but still...need to cut back T_T)

Btw, what hurts your stomach? That part confused me a bit.

Well I tried being a pure veggie before for a month and it upset my stomach for not eating meat. So I decided to stick to fish, but only dolphin friendly.^_^
 
Okay. Here's my super easy veggie minestrone recipe. It's easy and very healthy and inexpensive to buy the ingredients.

Saute a little chopped or minced garlic (and chopped onions if you like them) in the bottom of a big soup pot in a bit of olive oil. When it starts to smell wonderful, add vegetable broth. I usually use about 4 cups, but you can add more if you want to make more soup. Then I add two cans of tomato sauce (you can also use crushed tomatos if you like chunks of tomato). At this point, you have a lovely tomato soup broth. I usually add:

1 can of carrot slices
1 can of peas
1 can of three different types of beans (chick peas, cannelini beans, butter beans)
1/2 package of frozen chopped spinach
1/2 cup of little noodles

I let the soup come to a boil and then let it simmer for 20-25 minutes. Add salt/pepper/basil to taste. Sometimes I will use a little blender and blend 1/4 of the soup to make it thicker.

The wonderful thing about this soup is that you can add any kind of beans and/or veggies and it usually turns out wonderful. I use canned veggies/beans, but you could always add fresh broccoli, spinach, leeks, carrots, etc. Canned is just easier and make the whole process faster.

I usually garnish it with some fresh grated romano and make a couple small pieces of toasted bread for dipping. It keeps for a week in the fridge and even longer in the freezer. I think it's a great recipe for vegetarians because the beans/veggies provide you with vitamins and protein you need to feel your best.
 
PB & B

Natural Peanut Butter (or Almond Butter which I prefer)
Fresh Berries (blackberries or whichever ones you prefer)
Whole wheat bread/pita

make yourself a nice PB & B(erry) sandwich;) :D

Something which is also meant to be nice is:

One organic wholegrain weet-bix with either natural honey and banana slices on top or with honey and some raisins stuck to the top :)

Really? So you eat meat with every meal? :shock: Even when I was eating meat i'd have meat free days :lol: I guess i'm luckier than most because I enjoy cooking and I don't have to rely on pre-preared food or anything...I can imagine having difficulty with that, in New Zealand there aren't ANY ready meals that are vegetarian. No kidding. I don't think they even know who Linda McCartney is!

I just had to tell everybody about my little shopping trip! Well Oliver and I were heading off to our regular supermarket when I saw a gleaming new foodmart! PULL IN THERE! I said to Oliver. So we went in and the first thing I saw was this 20kg bag of onions. So I asked the guy how much they were and he looked at me in shock. "You want those onions....?". They obviously weren't for sale, i'd imagine they were just props to be split up for individual sale. "Yes, how much?" I said. He smiled and looked puzzled.."you know thats 20kg right..?" So I smiled sweetly. YES! I want those ONIONS! So he grinned and said.."i'll give them to you for $20! Does that sound fair?" FAIR? Yes of course its fair, I pay $3 for 1kg at the supermarket. "I'll take them!!!!" I said. So we now have 20kg of brown onions and I love them and I'm going to take lots of pictures because its so infinitely sexy I can't even begin to explain.

And now we get onto the point on how my life has been reduced to so little that I get excited over a bag of onions...

But that's story for another day.

Has anyone got a good and relatively sophisticated main meal recipe for my vegetarian mother-in-law who's coming in to town and has relatively impressive cooking creds?

I also had meat-free days before, but meat-free for a month gave me a bad stomach upset because of the lack of protein. So I just stick to fish and thinking about giving that up too and sticking with tofu, beans and other proteins maybe gradually. I think my digestive system needs to adjust. Then one day I will be a pure veggie only drinking milk:woot:
 
^I think it's much better on you physically and maybe mostly mentally to ease into it. Don't think about all the foods you can't/choose-not to have, instead think of all the wonderful foods you get to discover (through trial and error) that are yummy and good for you!! I can't wait for fall so I can eat PERSIMMONS that I discovered last year (I might not have been so adventurous if I hadn't been a vegetarian;) )
 
^ I definitely agree...and I never would have known about pumpkin lasagne or tofu parmegiana!
