I just found out today that I am allergic to dairy! I guess that was the shove I needed to go totally vegan, but I don't like soy milk or rice milk.

I'm looking for a whole different menu. I want something delicious & filling that I won't get tired of. I have a fairly long gap between breakfast & lunch, so a piece of fruit just doesn't cut it.

I want to cut back on dairy because I keep hearing a lot of stuff that makes me think it's not the best thing for me to be eating. I'm not worried about protein--I should be getting plenty in the rest of my diet. But I guess I need some for the "filling" requirement. Btw, as you may know I am an omnivore, but I thought you guys would be the best for advice about dairy-free.

I totally hear you. Most mornings, I grab fruit because it is easy, but it isn't filling for long! Sometimes I make steel cut oatmeal and mix it with some applesauce and protein powder. If I am really hungry, I will throw in some sliced almonds. It is pretty good. :D

I'm a fan of smoothies in the morning. I like soy milk on my cereal and porridge, it has a nice thick consistency but it absorbs the flavours of the cereal really well - better than dairy milk I find. (go vitasoy!) Home made bread is nice as well as just regular toast. I have relatively traditional breakfasts though so I'm not much help.

MissSakura, in terms of bread would you deem it unhealthy? I have been hearing that it is loaded with carbs (everyone knows that), but does it's benefits outweight it's not so good characteristics?

I hear that tortillas are much better in terms of carbohydydrates and the such.

Yes, I love steel-cut oatmeal ... it's kinda slow for breakfast for me tho' ... I usually have it on the weekend or for dinner. Very good with maple syrup, brown sugar, fresh blueberries, and I do the almond thing too ;) Those chunky spears of blanched almond, what are those called? :huh:

I decided to make some fruit crisp, probably peaches as they're in season now, but apples are great too. I will have to bake it ahead & time & I'll eat it cold for breakfast--yummy either way :chef: And now that you've reminded me, some of those almonds in it would be great ... :idea:

PS Thanks, GG :flower: A frittata looked like a good option for when it's cold enough to feel good about firing up the oven ...

Then I just scoop out what I want during the week and put it in the microwave for a few seconds to reheat. I also like to make smoothies with berries. I add protein powder to it and yum! :)

I am kinda off the microwave :blush: I only use it at work, and even there only occasionally ... so at home it has to be stovetop, oven, or cold ...

justlooking, do you mean the one with millet, barley, and date pieces? That sounded pretty good ...
 
I usually have a muffin for breakfast. I've got a delicious—yet healthy and vegetarian—recipe for muffins that I found off of Hungry-Girl.com. There are only two ingredients, and they're both easy to find. Note: they're not vegan, however, as one of the ingredients has milk in it.

1 box cake mix (any flavor; I like Cinnamon Swirl myself)
1 can solid pack pumpkin (15 oz.; use extra if you want bigger/moister muffins)

Mix the two ingredients together. Don't add anything else that may be mentioned on the box, such as eggs, oil, or water. The mixture will be very thick and you will be tempted to add in other things to make the batter smoother. DO NOT DO THIS AS IT WILL RUIN EVERYTHING! Place batter into muffin tins (or mini muffin tins) lined with paper, or sprayed with non-stick spray. Bake at 400 degrees for 20 minutes. Makes 12 regular or 36 mini muffins.
 
i will have to try those muffins! that is a great recipe for someone like me who always has bare cupboards!
 
How is rice milk?
I really don't like soymilk, except in lattes. Does rice milk taste a little more like real milk?

I don't think people should eat too much bread. I also dislike very refined bread, I like going for a thick heavy brown bread or rye/malt. I have no idea about the 'loaded with carbs' thing, bread is a good source of protein and iron...

I've never worried about what I eat in relation to the food groups, I have a varied diet and eat what I want without going overboard so I'm really not an authority on monitoring a diet like that.
 
Crakk, I agree with MissSakura...it's the white packaged bread which is full of bad stuff. I love rye, pumpernickel, and heavy whole grain breads which are full of nutrients.

My dogs love rice milk, but I have never brought myself to taste it :blush:
 
I ordered a bunch of info from PETA on going vegan, and it came yesterday. It was just some free pamphlets. Anyway, they had really graphic pictures in there from slaughterhouses. I swear that after seeing those, I can barely eat ANYTHING today. It was a bit disturbing, and I would have preferred not to look. Still, it is definitely encouraging me to kick my vegetarian thing into high gear.
