The Vegetarian & Vegan Thread

Ahh! I haven't checked this thread in quite some time but I've decided to narrow down my vegetarianism and go vegan for the month of February. I just feel like I need a detox (I've gained a few pounds this winter and feel like most of the unhealthy food I eat is made with milk, eggs and/or cheese) and to be just be healthier but I am quite worried I will eat dairy or something without even realizing it.
 
So I've been cooking my way through my Skinny b*tch Ultimate Cookbook and I made the black bean enchiladas tonight...They were a HIT! All my meat eater family members couldn't get enough. You have to go buy this book, it's great.
 
been going crazy cooking vegan mexican lately, the last three nights!
i cooked a whole lot of black eyed beans from scratch, then cooked them with onions, garlic, bell peppers, spices (cumin, corriander seed, chilli) and tomatoes. then adding a whole lot of fresh corriander/cilantro at the end. served with quinoa.
also made some vegan cornbread to have on the side. will post recipe if anyone would like it!
 
I have a major sweet tooth, so I was pleasantly surprised to find chocolate bars that were vegan AND without refined sugars, artificial ingredients etc. The brand GO MAX GO has the best, most delicious bars filled with caramel, nougat, nuts etc. LOVE! My friend and I split the Twilight bar and the Jokerz bar, essentially Mars and Snicker bars respectively. And I must say, I have found a new addiction :p

talking about sweet tooth cravings i just found out that the jam i used and the cookies i adore that have gelatin in them are made of fruit pectin. so they are vegetarian :D
(plus the jam is made with less sugar and is soooo good its andros, i take rapsberry :) and the cookies are low brand pims. :) too bad i finished them all... )
 
Oh god I had the worst experience today. I went to my dining hall and got pasta which had a sauce on it. I read what the ingredients were and they seemed okay, perfect for a vegetarian actually, so I got it. Turns out it had bits of ham in it. I took one bite and nearly gagged. It was awful. Honestly, I thought I was going to be sick. :(
 
^Argh...I totally understand that sick feeling...
I had once sick experience like that in a restaurant I did ask all over again about ingredients... but surprise when it contained sea food... I went to the toilet i wash my mouth with soap-gel gaaah... I can't stand sea food
And the last one was in Oslo I asked for a veggy option and my veggy option turned out to have chicken on it... really sick too...

In both places do they compensate me though... first with a decent veggy meal; second with a refund since i had to deal with someone really unpleasant before talking with the costumer care manager...
 
To be completely fair, ham is gross. Sorry it had to happen to you, hun.

I have been eating a lot of quinoa recently. It is easy to boil and prepare: cut up some veggies, sautee 'em and voila. But it is a chore to make food whenever I come home. I'd like to just grab something and chow down. Not easy. I had seen some things at my natural grocers where I only add hot water, but they aren't as cheap as, say, Ramen noodles. :p
 
Hey guys! It's my first post in this thread and I have read all your comments. :) I have so much respect for those who are vegetarians and vegans. And i'm really happy that the number of vegetarians is growing. All my family members are vegetarians except of my grandparents they are vegans ( and they are very VERY healthy seniors :) ). I hope to get along with all of you here. :)
I'm so enjoying apples with cinnamon these days. I hope I will never get bored of these two together because I love the taste so much!!!

Dear all,

how did you replace milk in your coffee? That`s the one thing I can`t get rid off... (please don`t suggest switching to tea - that`s not "my cup of tea" ;) )
 
^I use soy milk! I've always loved soy milk, but for some strange reason not in my coffee... but now I got used to it and really like it ^_^ oat milk tastes great in coffee too! and then there's also rice milk and almond milk (but almond milk is expensive here... €3 for one litre? no thanks!)
 
Gee I need advice here! I think Ive been missing a lot of protein. I've been eating chicken lately to get some in and dont get unhealthy, but it can't last. What has a LOT of protein but is vegetarian?? :s

(Oh, and gee france has this new concept which is ... yukk. Farmers sell pieces of meat of cows that are still alive, and once all the pieces are sold they kill them. What is horrible is that you go choose it, you look the cow in eye, and they were so beautiful... (Ive never actually seen a pretty cow, but these ones were...) anyway, in the program they showed the cows and then went directly in this little "cour" where the farmer had just received a package of pieces of meat. Its gross to see the before/after..)
 
I need some tips other than already calcium on tablets (already prescribed to me by a doc) for a proper vegan diet... Anyone knowing any vegan food highly rich in calcium? My endocrinologist here in Spain couldn't help me out with that... go figure!!!
Nowadays i couldn't sort out my way to be 100% vegan :(

missvsecret you remind me to an entire veggy/vegan family that was at one vegan convention in london -Summer 2005- they were so lovely & healthy people. And they were also 3 generations :)

I remember reading that sometimes vegans will keep molasses in their house and have a spoonful of it a day. Apparently, blackstrap molasses has 400 mg of calcium in 2 tablespoons.

Greeny vegetables have a lot of calcium in them. Collard greens and broccoli!

heroin chic I use soy milk and I love it. it's like a candy for me sometimes. :D
I actually don't even remember how real milk tastes because I have lactose intolerance.

I used Almond milk although my nutrionist said I should be using Soy milk because it has a lot more protein in it. I think it's like 5g vs 1g. Anyways Almond milk has less calories and a thinner consistency. I would compare Almond milk to fat free milk and soy milk to whole milk. I enjoy both though. I don't care for rice milk, it's too thin.

ediewho I'm not sure if you live in the US but we have things here called Calcium Chews. They are like little chocolate carmel candies. They give you 500mg of calcium per chew. They taste great and are totally vegan. I believe you can find them at any grocery store.
