The Vegetarian & Vegan Thread

I still have one tofurky left over (from my holiday tofurky purchasing craze). I'm going to cook it tonight! I can't wait. MMMMM.
 
Guys, take some roasting potatoes- red one's are great!
Toss in olive oil,rosemary, fresh sea salt and fresh pepper. Roast til very brown, move them around while cooking, about 45 min..
Then, when they come out, chop up into bit size cubes. Add 1/2 cup of Grapeseed Vegan "mayo"....toss around.
It's amazing!
 
ooo sounds yum. I've got a similar recipe too.

Red potatoes chopped into wedges, placed in a cassarole dish. Add olive oil and veggie broth in a 1-2 ratio, just enough to almost coat the potatoes. Add in a little rosemary, a pinch of dill, lemon juice, salt, pepper, and oregano. Nutmeg is optional. Bake in the oven at 350 degrees for about 45 minutes...opening a few times to stir them around. Viola! Greek potatoes!!
 
Since the summer is coming up, I have a great recipe you can make and take to the park. With you left over red bliss potatoes, you can get Veggenaise. I use the one made with Grapeseed Oil. I swear it tastes amazing. I still eat regular mayo, but this grapeseed oil, is better for you and also doesn't give you an upset stomach, the way mayo does to me sometimes.
Toss your potatoes with some of the Veggenaise. The potatoes don't have to be completely cooled. Room Temperature is perfect. Then you can chop up some chives and toss in, Salt and Pepper to taste.
I'll post some of my other recipe's too.

it's amazing to see how far I've come.. When I started this thread I was thinking about becoming a vegetarian. And now I eat 80% raw food and 20% cooked (whole grain or cooked veggies) and am a vegan for the most part (I don't want to say without a doubt I am because I haven't researched the definition very much)^_^ :woot:
 
How is the raw food part going? I've heard some things about it, but I never get to hear from people who actually eat a majority of their food raw.
 
^^ Woderful! I eat the cooked part in the evening after supper (a salad).. It makes it possible imo to eat so much raw foods when you have that little portion of cooked. Because I love bread so much I usually eat Ezekial bread, but when I want a change I'll have steamed veggies, baked potato with bragg amino's, etc... It's going good;) :flower:
 
I never thought about eating part raw..that might be easier for me.
The only thing is that I absolutely have to have cappuccino in the morning...
So, I guess that doesn't count.
Anyhow, here is a cooked recipe I made last night.
1/4 of a small onion-diced
2 garlic cloves- sliced or grated
2 tablespoons of olive oil
8 baby portobella mushrooms-thinly sliced
1/4 cup of heavy cream
dried chili flakes- 1 teaspoon
whole wheat pasta-
Heat the olive oil with garlic,onions and mushrooms, sautee around for about 2 minutes, add the heavy cream and turn the temp down a little, mix around as the cream bubbles up and add salt and chili flakes, keep stirring around for another couple minutes until mushrooms are cooked. Add the hot whole wheat pasta, directly from the water( so it doesn't get too dry)
and toss in the sauce.
It's SOOOOOO good.
Drizzle a little more olive oil.
 
Great recipe Lost! I like cooking with sherry too, especially with cream sauces.


Bonchic! Thanks for responding! What do you eat for protein that's raw? I'm so used to tofu, soy and beans. (Which are mostly cooked)

that's not including potatoes, etc.. that have to be cooked. Usually people consume too much protein so I don't find that it's a problem. I also take B vitamins;)

Awww. I've been vegi/vegan for about 5 years, but I get fish cravings sometimes, so I make exceptions every so often.
 
you don't need to eat tofu or beans for protein. fruits and vegetables have more than enough protein in them.
 
is it the same protein?^ in fruits and veggies? as in, good for building heart muscle?

I've tried soy burgers by like Boca and hated them:yuk: But I think Gardenburger makes delicious ones!! ;)
